Heat a pan over your camping stove or campfire.
Pour in the first dash of oil, then add the red onion and cook for a couple minutes.
Add the peppers and stir fry with the onion.
Meanwhile toss the salmon chunks in the fajita spice. Add a little more oil to the pan, and tip in the salmon. Let sit for 2 or 3 minutes, then toss around with the veggies.
Turn the heat down a little and make the guacamole by mixing together all the guacamole ingredients together in a bowl.
To serve, divide the fajita mix between the 2 wraps. Top with guacamole and sour cream and enjoy!

1 red onion, sliced
½ red, green and yellow pepper, sliced
2 more tsp oil
2 Alaska salmon fillets, diced into bite sized pieces
2 tsp fajita spice mix
1 avocado, diced
4 cherry tomatoes, diced
Juice 1 lime
½ red onion, finely chopped
Handful fresh coriander, chopped
½ red chill, finely chopped
¼ tsp salt
2 tortilla wraps
2 tbsp sour cream
